White wine and turkey are a match made in heaven! This gravy is one that will knock your socks off.
Ingredients;
- 1/2 cup dry white wine
- 1/4 cup corn starch
- 4 cups chicken stock
- 1 Tbsp butter
- 1 Tbsp olive oil
- Giblets from one turkey finely chopped
- 2 Tbsp minced fresh sage or 2 dried sage leaves
- 1/4 tsp salt
- 1/4 tsp pepper
In a small bowl mix cornstarch and 1/2 cup of stock until smooth. In a large saucepan, heat the butter and olive oil over a medium to high heat. Add the giblets then cook 5-8 minutes, or until browned.
Add the wine and sage to the pan. Cook for 3-5 minutes stirring gently to loosen up the browned bits from the pan. Add remaining stock and bring to a boil. Stir in the corn starch mixture, then return to a boil. Reduce heat and cook for 3-5 minutes or until thickened to your desired consistency, stirring occasionally. Stir in the salt and pepper.
