Northeast inspired Maple Bacon Turkey

What’s not to love! Turkey covered in bacon. Sounds like our Burned Turkey Family Recipe, but it’s got a few twists that are inspired by our friends in the Northeast. They have a wonderful and unique flavor plait.

Ingredients;

  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp poultry seasoning
  • 1 tblsp olive oil
  • 1 fresh turkey (about 12 pounds)
  • 8 sage leaves
  • 1 cup maple syrup
  • 10 slices of maple bacon
  • 3 tblsp all-purpose flour
  • 2 cups of turkey or chicken broth
  • 1/4 cup flat leaf parsley. Chopped.

Pre-heat your oven to 450 degrees F. While the oven is heating fit your roasting pan with a rack. Make sure your roasting pan and rack are large enough for the turkey.

In a small bowl combine the salt, pepper and poultry seasoning. Once it is thoroughly mixed together, add in the olive oil to form a thick paste.  Remove the neck and giblets and thoroughly rinse the inside and outside of the turkey. Pat dry the outside of the turkey and the inside with paper towels. Be sure to get the entire inner cavity patted dry along with the neck cavity.

This is an un-stuffed turkey. At this point you can tie the legs closed if you want then place the turkey into the roasting pan.Season the turkey with the spice rub all over the outside of the skin, plus pull up the skin and spread the spice rub under the skin. Tip: Remove your rings and other hand jewelry so the skin is not damaged. Tuck sage leaves under the skin and place into the chest cavity.

Roast the turkey at 450 degrees for 30 minutes. While the turkey is roasting at 450, combine the maple syrup with 1/4 cup of hot water. After 30 minutes reduce the oven heat setting to 350 degrees F and brush the turkey with the Maple Syrup Glaze. Roast for 1 hour brushing the Maple Syrup Glaze every 30 minutes. After an hour take the turkey out of the oven to apply the maple bacon. Be very careful because it will be very hot. Apply the maple bacon in a lattice pattern over the breast of the turkey. Put the turkey back in the oven and roast for another hour check the internal temperature of the thigh reaches 165 degrees F. If the internal temp is not 165 Degrees F then continue roasting until the turkey is done.

Remove turkey to a cutting board and allow to rest for 20-45 minutes. While the turkey is resting make your gravy. For a  good gravy for this turkey click the post below.
