For leftover Mashed Potatoes we suggest Potato Pancakes.
Ingredients;
- 2 cups left over mashed potatoes
- 3 large eggs
- 1 1/2 tblsp all-purpose flour
- 1 tblsp grated onion
- 1 1/4 tsp of salt
- 1/4 cup vegetable oil or butter
In a bowl lightly beat the eggs then add the flour, onion and salt and mix together. Then mix in the potatoes until all ingredients are fully integrated. In a large heavy skillet heat the oil or butter on a medium to high heat until hot. Once the oil or butter is hot, drop in spoonfuls of the potato mixture into the pan, being careful not to splatter the hot oil/butter. Spread the potatoes into a 3 inch cake about 1/4 inch thick. Fry until browned on the bottom, reducing heat to medium if needed to prevent burning. Turn the cake over to cook the other side until crisp, about 3-5 minutes each side. Remove from the pan and drain on paper towels. Serve with Sour Cream or Yogurt on top. The kids my like a little applesauce on top instead of the sour cream or yogurt.
