Ham & Cheddar Mini Muffins

This is a great and savory appetizer for your Holiday dinner party. They are quick, easy and oh so tasty.

Ingredients;

  • 2 cups (8oz) finely shredded cheddar cheese
  • 2 pkgs (2 1/2 oz each ) thinly sliced (deli) ham, then chop it
  • 3/4 cup mayonnaise
  • 1/2 cup real bacon bits
  • 2-3 tsp Dijon mustard
  • 2 tubes large refrigerated flaky biscuits. (10.2 oz each tube)
  1. In a large bowl combine the mustard, bacon, mayo, ham and cheese and mix thoroughly. You will need about 30 mini muffin cups for this (enough tins to have the 30 cups). Split the biscuits into thirds then line each mini muffin cup with the biscuit, pressing the biscuit into place. Do NOT grease the tins. Fill each cup with about 1 TBSP of the cheese mix.
  2. Pre-heat the oven to 450. Bake at 450 for about 9-11 minutes. They should become golden brown and the cheese should be melted. Remove from the oven and let rest for about 2 minutes before removing them from the pan. Serve them warm for best results.
