These meatballs make a great appetizer all year around! They store well in your freezer too for a nice quick snack for when friends drop by. The ingredients are broken into two groups to make it easy.
The Meatball;
- 2 cups quick cooking oats
- 1 can (12 oz) fat-free evaporated milk
- 1 small onion, chopped finely
- 2 tsp garlic powder
- 2 tsp chili powder
- 3 lbs lean ground beef
For the sauce;
- 2 1/2 cups catsup
- 1 small onion chopped finely
- 1/3 cup packed brown sugar
- 3/4 – 1 tsp garlic powder
- 1 1/4 tsp chili powder
- 2 tsp. liquid smoke
Pre-heat the oven to 400 degrees F. In a large bowl combine the oats, milk, onion, garlic powder, chili powder. once these ingredients are mixed together add the ground beef and mix lightly but thoroughly. Shape into balls about 1 inch in size.
Grease racks and put them onto shallow backing pans and place the meatballs on the racks. Bake 15-20 minutes or until cooked throughout. Drain meatballs on paper towels.
In a Dutch Oven combine the sauce ingredients. Bring to a boil over medium heat, making sure to stir constantly. Reduce the heat to a simmer, uncovered for about 2-3 minutes or until slightly thickened. Add the meatballs and heat through, stirring gently.
Remove from heat and serve while warm/hot.
